Ask a chef: Starfish Cafe's kumara and bacon cakes

Ask a Chef reveals the secrets of those superb dishes you ate in cafes and restaurants and wanted to try yourself.

 

Starfish Cafe's kumara and bacon cakes
Makes 15

Ingredients

1kg red kumara
3 large potatoes
10 rashers streaky bacon, cooked and diced
4 spring onions finely chopped
1 Tbsp cumin seeds, toasted
salt and pepper to taste. 

 

Method

Peel and cook the kumara and potatoes, mash and allow to cool.

When cool, add diced bacon, toasted cumin seeds, spring onions, and salt and pepper to taste.

Shape into palm-sized cakes.

Shallow-fry in oil.

Top with garlic aioli and relish, and serve with salad.
