Ask a Chef reveals the secrets of those superb dishes you ate in cafes and restaurants and wanted to try yourself.

 

Croque-O-Dile Cafe's orange almond cake

Ingredients

2 medium oranges
250g caster sugar
350g ground almonds
6 eggs
2 tsp baking powder

Syrup

150ml orange juice
julienned zest of one orange
150g sugar

 

Method

Place wiped oranges in a pot and cover with cold water. Bring to the boil and cook for 20 minutes. Remove from pan and cool.

Cut oranges in half, remove any seeds and place in a food processor. Add caster sugar and process for 30sec. Add ground almonds, eggs and baking powder and process again for 20sec.

Pour the mixture into a greased and lined 23cm spring-form tin and bake at 180degC for about 60min or until a skewer inserted into the middle comes out clean.

Meanwhile, bring the orange juice, zest and sugar to the boil and simmer until it forms a light syrup. When the cake is cooked, spoon the syrup over.
