Morning Magpie's spicy broccoli soup

Ingredients

2 heads broccoli
2 onions
1 carrot
1 stalk celery
1 soft boiling potato
1 chilli, medium hot
2 cloves garlic
butter/cream
salt, pepper, nutmeg


Method

1. Slice onions and sweat on medium heat until soft, without colouring.

2. Add garlic and about 2 litres of boiling water. (Add more at the end. See note 6.)

3. Add diced carrot, celery, potato, deseeded chilli and broccoli stems (keep the green heads for the last 10 minutes to give the soup a nice green colour).

4. Simmer for 50 minutes.

5. Add the broccoli heads and boil for 10 minutes.

6. Blitz and season with salt, pepper and nutmeg, adding water boiling water to get creamy consistency.

7. Before serving, add some cream and a cold piece of butter.8. Blitz again with a stick blender and serve with fresh bread.
