Nova's zucchini and apple cake 

Ingredients

4 eggs
2 cups white sugar
1 cup vegetable oil
2 cups all-purpose flour
2 tsp ground cinnamon
1 tsp salt
2 tsp baking powder
1 tsp baking soda
1 cup grated apple or spiced apple mix
1 cup chopped walnuts or pecans
2 cups grated zucchini
1 tsp vanilla extract

 

Method

Preheat oven to 175degC. Line a cake tin with baking paper.

Sift together flour, cinnamon, salt, baking powder and baking soda.

In mixer, beat eggs and sugar until light coloured. Mix in oil. Add sifted ingredients to egg mixture and beat for 2 minutes. Stir in apple, chopped nuts, vanilla and zucchini. Mix thoroughly. Pour batter into prepared pan.

Bake for 80 minutes, or until tester inserted in the centre of the cake comes out clean. Cool for 30 minutes.

Make a lemon cream cheese icing to top it with.
