Ingredients 


4 cups organic flour
5 tsp baking powder
½ tsp salt
4 tsp cinnamon
3 tsp ground cloves
cup brown sugar
2 cups organic orange juice
1 cup currants
1 tsp orange oil
2 organic apples
¼ cup brown sugar

 

 

 

 

 

 

Method

Combine organic flour, baking powder, salt, cinnamon, ground cloves and brown sugar.

Combine juice and currants and microwave for 2 minutes. Add orange oil. 

Add wet to dry ingredients and fold gently until combined. Do not overmix.

Leave to rest for 30 minutes.

Flatten on a tray. Use a rolling pin if needed.

Grate the apples on to the centre of the base and spread quarter of a cup of brown sugar
on top.

Roll mixture into a log and bake at 180degC for about 35 minutes.

Cut into slices.
