Ask a chef: Port Royale chocolate fudge

Ask a Chef reveals the secrets of those superb dishes you ate in cafes and restaurants and wanted to try yourself.

 

Port Royale chocolate fudge 

Ingredients

3 packets of round wine biscuts
300g butter
can condensed milk
2 cup coconut
2 Tbsp cocoa
zest of one orange

Icing

2 cups chocolate
100ml cream

 

Method

Melt butter and add condensed milk. Blend biscuits and cocoa in food processor until crumbly and add to butter mixture.

Mix coconut and orange zest.

Line a sandwich tin with baking paper and press fudge mixture into it.

Icing

Bring cream to the boil and remove from heat. Add broken-up chocolate. Stir until chocolate has melted. Pour over fudge and sprinkle with coconut.
