Ask a Chef reveals the secrets of those superb dishes you ate in cafes and restaurants and wanted to try yourself.

 


Tasse Cafe’s spinach and cheese quiche

Ingredients

pastry (make your own oruse store-bought sheets)
1 bag fresh spinach, chopped
4 Tbsp basil pesto
250g cottage cheese
1 cup grated cheese
1 eggdash of cream salt and pepper to taste
sliced tomato

Method

Preheat oven to 200degC.

Spray individual pie dishes or one large family size dish with oil spray. Lay pastry into the pie dishes and trim to size.

Bake in a hot oven for 8 minutes.

In a large bowl, mix all the filling ingredients.

Fill the dishes with the mixture and put a slice of tomato on top and some grated cheese.

Return to oven for another 8 minutes (longer for a family size dish) or until the mixture has set.
