cooked by people at home in Otago. This week, Jeanine Benson,
from New Zealand, shows us how to make meat loaf with spiced
peaches.
This is Jeanine Benson's mother's meat loaf recipe which her
family now enjoy.
However, she has never tasted it, as she has been a
vegetarian since she was a child.
She likes to serve it with spiced peaches - her contribution
to her mother's dish.
Meat loaf with spiced
peaches
700g minced beef
1 onion, grated
1 cup breadcrumbs
1 tsp salt
pinch black pepper
1 Tbsp tomato sauce
1 Tbsp Worcestershire sauce
4 Tbsp water1 egg
1 Tbsp oil
cheese, sliced
Mix all ingredients except the oil and cheese together, and
press into a greased tin. Drizzle oil over the top. Bake in a
preheated oven, 180degC for an hour.
When cooked, turn out on to a heatproof plate, spread slices
of cheese over the top and put back in the oven for a few
minutes until the cheese melts.
Spiced peaches
1 can peach slices (or halves)
1 Tbsp tomato sauce
1 Tbsp chow-chow pickle
Heat peaches in their juice. Add the tomato sauce and
chow-chow to the peaches and thicken the sauce with
arrowroot.
TIPS:
• Mrs Benson likes to bake this in a ring tin and fill the
centre with parsley to serve.
• To check the loaf is done, poke a knife in and make sure
the loaf is not still pink inside.
• Surround with spiced peach halves filled with a little bit
of tomato sauce and chow-chow.
• Serve with potatoes - mashed, baked or chips - and a green
vegetable. It is also nice cold with salads.
