Ask a Chef reveals the secrets of 'Mash' bar in the
Octagon, Dunedin.
Mash's beef and Guinness pie
puff pastry sheets
1 kg diced stewing beef
1 onion, diced
4 garlic cloves, finely chopped
2 Tbsp whole-grain mustard
4 Tbsp tomato paste
1 Tbsp mixed herbs
1 Tbsp brown sugar
1 can Guinness
a splash of red wine
salt and pepper to taste
mash topping:
boiled potatoes
butter
salt and pepper
grated cheese
egg wash (egg beaten with a little water)
To make the filling, brown beef, onions and garlic.
Add remaining ingredients and simmer for about two hours
until the beef is tender.
More liquid can be added if it is reducing too quickly.
Allow to cool.
Mash the cooked potatoes with butter and seasoning.
Line greased pie tins with puff pastry.
Add filling and top with mashed potatoes and a sprinkle of
cheese.
Brush the edges of the pastry with egg wash.
Bake for 25-30 minutes at 200degC.
