Ask a Chef: Cranberry, pistachio and white chocolate slice

How to make the cranberry, pistachio and white chocolate slice served at Good Oil Cafe at Nichol's Garden Centre.

Ingredients

300g white chocolate, chopped
150g brown sugar
200g butter, chopped
350g condensed milk
300g ground almonds
Half cup pistachio kernels
Half cup cranberries
Half cup dried apricots, chopped

Method
Put half of the white chocolate, the brown sugar, butter and condensed milk in a bowl and melt over a pot of hot water.
Add rest of ingredients and mix until combined.
Press into a 19cm by 32cm tin and refrigerate.
