Ask a Chef: The Coffee Post's berry and coconut cake

The Coffee Post's berry and coconut cake

3 cups plain flour
4 tsp baking powder
2 cups caster sugar
2 cups desiccated coconut plus extra for sprinkling
420ml can coconut cream
3 eggs
1 tsp vanilla essence
400g frozen mixed berries

Grease and line a 20cm x 30cm baking pan. Preheat oven to 160degC.

Sift together the flour, baking powder and caster sugar. Add the coconut and mix well.

In another bowl whisk together the coconut cream, eggs and vanilla essence. Slowly add the dry mix to the wet mix. Fold gently until incorporated.

Pour into prepared baking pan and smooth the top with a spatula.

Arrange frozen berries on top then sprinkle with coconut.

Bake for 45-55 minutes until sponge springs back when touched.
