Ask a Chef reveals the secrets of those superb dishes you ate in cafes and restaurants and wanted to try yourself.

 

The Good Earth Cafe vegan organic apple, currant and orange scone

Ingredients

4 cups organic flour
5 tsp baking powder
½ tsp salt
4 tsp cinnamon
3 tsp ground cloves
¾ cup brown sugar
2 cups organic orange juice
1 cup currants
1 tsp orange oil
2 organic apples
¼ cup brown sugar 

 

Method

Combine organic flour, baking powder, salt, cinnamon, ground cloves and brown sugar.

Combine juice and currants and microwave for 2½ minutes. Add orange oil.

Add wet to dry ingredients and fold gently until combined. Do not overmix.

Leave to rest for 30 minutes.

Flatten on a tray. Use a rolling pin if needed. Grate the apples on to the centre of the base and spread quarter of a cup of brown sugar on top.

Roll mixture into a log.

Bake at 180degC for about 35 minutes.

Cut into slices.
