It is Pen-y-bryn Lodge as you have never seen it before.

Co-owner James Boussy has re-created the historic Oamaru mansion in gingerbread, following a tradition that started 13 years ago.

The exquisite creation, using only gingerbread, royal icing and caramel, took about 40 hours to make.

The detail included hundreds and thousands for the stained-glass windows.

It will take pride of place over the festive season as Mr Boussy and his partner, James Glucksman, mark their first Christmas in New Zealand.

They emigrated from Beijing earlier this year.

Pen-y-bryn - believed to be the largest all-timber single-storeyed house in New Zealand - was much more complicated to create than a replica of a previously owned house in Virginia, in the United States, Mr Boussy said.

The gazebo proved a bit challenging - "gravity and frosting don't go together very well" - and the roof was another little problem.

"I did Google-Earth it and that's the best I could do. I think it's fairly close," he said.

Mr Glucksman mixed the dough and also came up with the recipe to make the more structural royal icing.

While the couple will be busy working over the festive period, they are looking forward to the arrival of their dogs, Leo and Ivan, who have been in quarantine, on Christmas Eve.

"That will be the true Christmas gift for me," Mr Boussy said.
