The Esplanade's sweet muffin

Makes 6 large muffins

Ingredients

Dry mix
390g flour
190g brown sugar
12g baking powder
4.5g cinnamon
115g oats
115g sultanas
Pinch of salt

Wet mix
270g milk
90g canola oil
115g yoghurt
2.5 eggs
¾ average size carrot, grated
¾ average size banana, mashed

Method
Mix the two together, line muffin tins with baking paper, fill and bake at 150degC for about 25 minutes. Top with granola.
