Marbecks' broccoli and bean salad

Ingredients
1 head broccoli, cut into small florets
500g brussel sprouts, cut into quarters
1 cup red kidney beans (can be canned)
1 cup black-eyed beans (can be canned)
1 cup turtle beans (can be canned)
1 cup frozen corn kernals 
shredded kale
shreeded silverbeet

Lemon vinagrette
2 Tbsp lemon juice
5 Tbsp olive oil
½ tbsp dijon mustard
sugar to taste

Method
Lightly blanch broccoli and brussel sprouts.

Then add to beans and corn and combine.

Add kale and silverbeet and toss through with lemon vinagrette.

Season with salt and pepper.

Lemon vinagrette
Place all ingredients in a jar with a tight fitting lid and shake well.
