Croque-o-Dile cafe's gluten-free ginger slice

Croque-o-Dile cafe's ginger slice

Makes 2 large slice trays

Ingredients
3 cups gluten-free plain flour
3 cups rolled oats
2¼ cups shredded coconut
2¼ cups brown sugar, firmly packed
7 Tbsp water
6 Tbsp honey
1½ tsp baking soda
375g melted butter

Topping
400g butter
1 cup syrup
126g icing sugar
7 Tbsp ground ginger
crystallised ginger to garnish

Method
Preheat oven to 200degC.

Place dry ingredients in large bowl and mix together. Add butter and mix well.

Melt water and honey together in microwave and then add baking soda.

Divide mixture into two slice tins and press down till flat.

Bake for 30 minutes.

While base is cooking, melt butter and syrup in two pots over a low heat. Add icing sugar and ground ginger. Mix well.

Spread icing on base and sprinkle with crystallised ginger.

Leave to set.
