Good Oil tomato basil soup

Serves 4

1 onion finely diced
1 carrot diced
2 garlic cloves, sliced
2 400g cans chopped tomatoes
1 cup chicken stock
2 Tbsp brown sugar
50g butter diced
2 Tbsp basil pesto
salt and pepper
½ cup cream

To serve
olive oil and fresh basil

In a pot saute onions, garlic and carrot in a little olive oil.

Add the cans of tomatoes, chicken stock and brown sugar and bring to a simmer. Simmer for 30 minutes.

Add butter and pesto.

Blend to a smooth consistency and season to taste.

Add cream and stir through.

Serve with fresh ciabatta and garnish with fresh basil.
