Morning Magpie’s ginger loaf

Wet ingredients
250g ginger, peeled and grated
240g molasses
360g golden syrup
415g sugar
500ml canola oil

Dry ingredients
500ml water, boiled
3 tsp baking soda
760g white flour
2 tsp cinnamon
1 tsp cloves
pinch of black pepper
1 tsp ground ginger
4 free range eggs

Method
Mix baking soda with water then add to wet ingredients.

Slowly add remaining dry ingredients to wet ingredients and mix until smooth. Then add the eggs, mix and pour into a loaf tin.

Bake at 170degC for 45mins or until set.
