Salmon and grain salad

Salmon and grain salad

Ingredients
Approx 200g hot-smoked salmon
1 cup cooked white quinoa
100g cooked edamame beans
½ punnet of cherry tomatoes, halved
1 head broccoli, chopped and blanched
1 carrot, julienned (sliced thinly)
½ spring onion, sliced
200g mesculn salad mix

Dressing
1 Tbsp honey
1 Tbsp white wine vinegar
2 lemons, juiced
pinch salt
150ml canola oil
50ml olive oil

Method
Except for the salmon, toss all the ingredients together.

Whisk the dressing ingredients together and pour over salad and toss.

Layer the desired amount of salmon through the salad.
