Scones from the Vulcan Hotel, St Bathans

Scones from the Vulcan Hotel, St Bathans

Ingredients
3 cups flour
4½ tsp baking powder]
a pinch of salt
25g butter
1 cup milk (or ½ a cup milk and ½ a cup of cream)

Method
Sift together dry ingredients. Rub in butter and add milk/cream. Mix to a soft dough.

Knead on a floured board and place on a hot oven tray. Bake in a hot oven at 230degC for 10-15 minutes.

Remember the most important thing for this recipe is to have a light hand.

Do not cut the scones until several minutes after they come out of the oven.

Serve with jam and cream.
