Ask a Chef reveals the secrets of those superb dishes you ate in cafes and restaurants and wanted to try yourself.
Tees St Cafe's matcha and figs bliss balls
200g dried figs, soaked for 5 minutes in warm water, then strained.
100g pitted dates
50g pumpkin seeds
2 tsp vanilla extract
110g desiccated coconut
1 Tbsp matcha powder, plus extra for dusting
150g 70% dark chocolate, melted
Place the figs, dates, pistachios, pumpkin seeds, vanilla extract, matcha and coconut in a food processor and process for 5 minutes, scraping down the sides until the mixture comes together.
Roll into balls and dip them one by one in the melted chocolate. Set aside.
Once cooled, dust the bliss balls with the extra matcha powder.
