Ask a Chef reveals the secrets of those superb dishes you ate in cafes and restaurants and wanted to try yourself.

Berry chutney

Serves 6 

Ingredients 

500g frozen mixed berries
1 tart apple
2 red onions finely diced
360g brown sugar
190ml white vinegar
75g chopped mixed peel
½tsp salt
¼tsp ground ginger
¼tsp ground cloves
¼tsp ground allspice

Method

Combine all ingredients in a large pan and bring slowly to the boil, stirring until the sugar has dissolved.

Boil gently for about 50 minutes or until mixture reaches a thickish consistency.

Serve with pate and bruchetta: brush thick slices of baguette with olive oil, rubbed with a garlic clove and sprinkled with tomato salt.
