Good Earth Cafe’s Anzac ginger crunch

Ingredients

250g butter
3 Tbsp golden syrup
1 cup brown sugar
1 cup coconut
1½ cups rolled oats
1 cup flour
2 tsp baking powder
3 tsp ground ginger

Icing

3 cups icing sugar
1 tsp ground ginger
1 tsp vanilla essence
½cup roughly cut crystallized ginger
maple syrup to mix

Method

Melt butter and golden syrup together in a pot.

Add butter mix to brown sugar and cream in a cake mixer.Add all other ingredients and mix well.Press into a rectangle tin about 30cm long.

Bake at 180degC for 15 minutes or until golden.Allow to cool.

Icing

Place all ingredients in a mixer and use the maple syrup to get the right consistency for a thick icing. Pour on to base and chill.
