Good Oil’s date slice

Ask a Chef reveals the secrets of those superb dishes you ate in cafes and restaurants and wanted to try yourself.

Makes 20 pieces approx

4 cups dates

2 cups brown sugar

2 cups flour

2 tsp baking powder

2 cups shredded coconut

10 Weetbix

250g butter

4 Tbsp golden syrup

2 eggs

To serve

Yoghurt or cream.

Method

Heat oven to 180degC bake.

Line 30cm x 20cm slice tin with baking paper.

Soak dates in 1 cup water and place in microwave for 4 minutes. Mash into a paste and set aside.

Place all dry ingredients in a bowl and mix together.

Melt butter and golden syrup in microwave.

Add eggs to dry mixture and then add butter and syrup mix.

Mix together to make a sticky wet dough.

Place half of the mixture in prepared baking tray and spread to cover whole tray.

Spread the softened date mix over the top evenly.

Roughly drop remaining dough mixture in patches over the top.

Cook for 20 minutes until golden brown.

Remove from oven and allow to cool.

Cut to your desired size and serve with yoghurt or cream.
