Alicia Rosevear (21), fellow Otago law student Amber Hosking (22) and coach Matthew Mortimer (23) were chosen after winning the New Zealand Red Cross moot competition, on international humanitarian law, in Wellington last December.
The three were presented with their winners' trophy by New Zealand Red Cross national president Dr Jenny McMahon this week.
Ms Hosking said it felt like a ''great accomplishment'' to win the competition and be chosen to go to Hong Kong.
''Mooting is great ... because you are practising the skills a lawyer needs, and then the Red Cross competition is a great opportunity to learn something about an area of law we hadn't had a lot to do with.''
The team will leave next Tuesday and will represent New Zealand against 24 teams from 18 countries across the Asia-Pacific region.
New Zealand Red Cross advocacy and policy manager Gabrielle Emery said the Otago team won because each member presented strong legal arguments and were composed and professional in their delivery.
''They were able to think on their feet and demonstrated an excellent understanding of international humanitarian legal principles.
They were also not fazed by a high degree of questioning by the judges,'' she said.
