Ask a Chef reveals the secrets of those superb dishes
you ate in cafés and restaurants and wanted to try
yourself.
This week: TECHnique's chocolate brownies (Makes 20)
225g butter
400g sugar
10ml vanilla essence
4 (size 7) eggs
80g cocoa
½ tsp baking powder
¼ tsp salt
125g flour
130g chocolate chips
Melt butter gently over hot water.
Stir in sugar and vanilla, remove from heat. Beat in eggs one
at a time.
Mix together cocoa, baking powder, salt and flour and
sieve.
Add flour mixture and chocolate chips to the egg mixture and
mix lightly.
Pour into a greased, deep baking pan, 30cm x 23cm and bake at
180degC for 20-25 minutes or until the centre springs back
when lightly pressed.
Cool in the baking pan and cut into required shapes, dust
with icing sugar and serve with your favourite ice cream and
fruit coulis.
