The Coffee Post's banana and pecan loaf

Ingredients

2 bananas
1 cup brown sugar
1 tsp vanilla essence
2 eggs
¾ cup buttermilk
2 cup flour
3 tsp baking powder
1 tsp baking soda
1 tsp cinnamon
¾ cup chopped nuts (walnuts or pecans are best)

 

Method

Grease and line a large loaf tin.

Mash bananas, sugar and vanilla together.

Add eggs and buttermillk and beat well.

Sift dry ingredients.

Fold dry ingredients and half-cup nuts into banana mixturePour into prepared tin.

Sprinkle remaining nuts on top.

Bake at 160degC for 50-60 minutes until cooked through.

Slice when cooled.
