100g dark chocolate
200g brown sugar
3/4 cup water
1/2 cup plain flour, Edmonds plain gluten free flour also works well
1/2 cup of desiccated coconut
1/4 cup cocoa powder
2 eggs, beaten lightly
Grease 23cm square cake pan, line base and sides with baking paper.
Combine butter, chocolate, sugar and water in a medium pot; stir over a low heat until butter and chocolate melt. Sift the flour and cocoa into a large bowl, add coconut; whisk in eggs and the chocolate/butter mixture. Pour the mixture into the prepared pan; bake in the oven at 160°C for 1 hour or until firm to the touch. Cool brownies in pan before cutting into squares.
