Competitors could enter steers or heifers in three carcass weight classes — 220kg to 270kg, 270.1kg to 320kg and 320.1kg and heavier, competition committee chairman Barry Gray, of Owaka, said.
Entries would be judged on-the-hoof at Charlton Saleyards in Gore and on-the-hook at the Alliance plant in Mataura.
Carcasses would be judged for muscle class and eating quality including marbling, fat cover and measured for the acidity or alkalinity of the meat.
Entries close on June 2.
