Thinking outside the square brings rewards for butchery

A lot of trial and error goes in to creating an award-winning sausage, but for a Cromwell butcher it has been a case of trial and success, bringing home four accolades at the 28th National Sausage Awards held in Auckland this week.

The Fridge Cromwell owner and butcher Jayne McMillan said winning four awards after entering six sausages was awesome.

This was the butchery’s best performance at the awards since they first entered in 2020.

The four winning snags were a Turkish lamb kebab (gold), chicken chow mein (gold), venison, roast garlic and smoked chilli (silver) and an unusual-sounding classic Australian Vegemite and cheese (bronze).

"You’ve got to think outside the square," she said.

This awards drew 841 entries across 13 categories with the supreme prize being given to Auckland’s Westmere Butchery for its beef, parmesan and truffle sausage.

The butchery was yet to receive feedback from the judging, but should it in a report in the next few weeks.

"We don’t know exactly, but it’s [the sausages] obviously done well to be up there in that percentile."

A lot experimentation went into creating their bangers, with the butchers at the Fridge coming up with novel ideas to see if they were able to capitalise on them.

They were creative with flavours that people were familiar with, but did not expect to see in a sausage, Mrs McMillan said.

Otago’s other winners at the National Sausage Awards were Arrowtown’s Fergbutcher, which won a category champion, gold, silver and bronze award; Links Quality Meats in Dunedin, which received and silver and bronze award, and New World Wānaka, which was awarded a silver.
