Everyday Gourmet florentines

Ingredients
50g flaked almonds
50g slivered almonds
50g dried apricots
50g dried cranberries
¾ cup soft brown sugar
¼ cup white sugar
50g salted butter
¼ cup water
2 Tbsp creme fraiche
250g dark chocolate
1 Tbsp coconut oil

Method
Put almonds, apricots and cranberries into a food processor and pulse till thoroughly chopped.

Place in a large bowl.

In a heavy saucepan place both sugars, butter and water and bring to boil, stirring until soft-ball stage.

Remove from heat, add creme fraiche.

Pour over dry mix and mix through.

Put the dark chocolate and oil over a double boiler and stir till melted.

Pour into lightly greased tart tin tray to cover the bottom.

Add your caramelised topping on top and refrigerate till set.
