Faigan's Cafe and Store's butterscotch and nut muffins

Makes 9
Ingredients
Butterscotch
150gm butter
¾ cup sugar
¾ cup walnuts
Muffins
3 cups self-raising flour
pinch salt
1¼ cups sugar
150g butter, melted
2 eggs, whisked lightly
2 cups milk
Method
Butterscotch: Melt and mix together.
Muffins: Mix dry ingredients together.
Mix wet ingredients together and add to dry ingredients. Fold together, but do not overmix.
Put 2 tablesponns butterscotch mix in bottom of a Texan muffin tin.
Fill with muffin batter.
Put 1 tablespoon butterscotch mix on the top of the muffin batter.
Bake 15-20 minutes at 180degC.
Ice with caramel icing.
