Ask a chef: The Eatery chocolate brownie

Ask a Chef reveals the secrets of those superb dishes you ate in cafes and restaurants and wanted to try yourself.

 

The Eatery chocolate brownie

Ingredients

400g dark chocolate (at least 55% cocoa solids)
325g butter
6 eggs
2 egg yolks
300g caster sugar
50g cocoa
80g plain flour 

 

Method 

Heat oven to 180degC fanbakeButter and line 23x33cm baking tin.

Gently melt chocolate and butter and then allow to cool a little.

Whisk the eggs and two egg yolks in mixer until pale.

Fold in melted chocolate.

Sieve in cocoa and flour and fold everything together until evenly mixed.

Pour into tin and bake 25min-35min. Allow to cool in tin.

Cut into 12 and indulge.
