Governor's Cafe neenish slice
Ingredients
Base
1 cup plus 2 Tbsp gluten-free flour
1 Tbsp cocoa
1 cup plus
2 Tbsp brown sugar
1½ cups coconut
1½ cups cornflakes
1 egg
125g melted butter
Filling
1½ cups condensed milk
1½ cups icing sugar
225g butter, chopped and softened
Ganache
150g milk or dark chocolate
150g white chocolate
75ml canola oil
Method
Lightly mix all dry ingredients in a food processor (or crush cornflakes and mix ingredients by hand).
Mix egg and melted butter in a separate bowl and then stir through dry ingredients.
Press mixture into a lined baking tin (23cm x 30cm) with your hands and bake at 150degC for about 10 minutes. Allow to cool before filling.
Filling
Beat all ingredients with a hand mixer for 8-10 minutes. Pour into cooled base and spread evenly. Allow a few minutes for filling to set.
Ganache
Melt all ingredients in the microwave until smooth and even. Pour immediately on to topping and spread evenly. For a variation, sprinkle some roughly chopped white and dark chocolate buttons on to the topping before it sets.
