RECIPE: Sidewalk Café's apricot caramel slice

Jeanette Barnes, co-owner of the Sidewalk cafe, in Alexandra, reveals the secret of the cafe's apricot caramel slice.

Sidewalk Cafe's apricot caramel slice

Base:

3 cups flour
2 tsp baking powder
1 cup brown sugar
250g butter, melted

Filling:

150g butter
1/2 cup golden syrup
2 cans condensed milk
1/2 cup coarsely chopped apricots

Topping:

chocolate melts

To prepare base:

Combine dry ingredients and melted butter.

Mix well and press into a greased and lined deep slice tin.

To prepare filling: place the second measure of butter and golden syrup in a saucepan and bring to the boil, stirring.

Remove from heat, stir in condensed milk and apricots. Pour over base.

Place melts evenly over the filling.

Bake in a preheated oven at 180degC for 30 minutes.

Allow to cool and drizzle with melted chocolate (white and milk).
