Ask a Chef: Double Black’s vegan loaf

Ask a Chef reveals the secrets of those superb dishes you ate in cafes and restaurants and wanted to try yourself.

Double Black’s vegan loaf

Ingredients
8 bananas
¼ cup golden syrup
¼ cup maple syrup
1½ cups rice flour
3 cups almond meal
2 tsp baking powder
1 tsp baking soda
½ tsp salt
4 vanilla essence
½ cup coconut oil
1 cup soaked dates
handful apricots
handful walnuts

Method
Mash bananas with vanilla essence in a bowl. Add the golden and maple syrups. Add dry ingredients and combine then add coconut oil, dates, apricots and walnuts and mix.

Place strip of baking paper into two loaf tins and spray. Put equal amounts of the mixture into each loaf tin.

Top with slices of banana, apricots or walnuts and bake at 165degC for 50-60 mins or until cooked.
