Ask a Chef reveals the secrets of those superb dishes you ate in cafes and restaurants and wanted to try yourself.
250g butter, melted
250g cream cheese
1 bunch of green onions, cut very thinly
½ red onion, finely diced
250g tasty or mild cheese, grated
Melt butter in pot, add flour and whisk together. Cook off for 1-2 minutes.
While whisking, add milk and continue to whisk until thick.
Mix rest of ingredients together and add to white sauce. Season with salt and pepper.
Spread mixture on fresh thin-sliced bread.
Grill in oven, making sure you turn them.
Finish with flaky sea salt and fresh cracked pepper.
Note: These can be made without the white sauce, just mix cream cheese and rest of ingredients together. Makes about 15.
