The Merchant of Clyde cafe's date scones

Ingredients
1kg self-raising flour
200g caster sugar
250g salted butter
500ml full fat milk
600g chopped dates
1 Tbsp salt

Method
Preheat oven to 200degC.

Sift together flour, salt and caster sugar in a large bowl. Rub in butter until the mixture resembles breadcrumbs.

Stir in the chopped dates, and combine the milk into the flour mixture to make a soft, sticky dough.

Turn dough on to a lightly floured surface and knead for 30 seconds or until just smooth.

Cut the dough into 12-16 squares or rounds, brush tops with a little milk and place on a tray.

Bake for 10-15 minutes or until golden.
