Odelay Cafe’s fig and prune loaf

Ask a Chef reveals the secrets of those superb dishes you ate in cafes and restaurants and wanted to try yourself.

Serves 10 generous slices

Ingredients
1 cup pitted dates, soaked in ½ cup hot water for 10 minutes and drained
3 small or 2 large mashed bananas
½ cup chopped figs
¾ cup chopped prunes
120g soft brown sugar
150ml vegetable oil
1½ tsp vanilla essence
2 eggs, beaten
½ cup plain yoghurt
200g plain flour
1½ tsp baking soda

Method
Heat oven to 170degC. Soak dates to soften. In a bowl, add mashed bananas, chopped figs, prunes, drained dates and brown sugar.

Add oil, eggs, vanilla and yoghurt and mix. Sift flour and baking soda and add to bowl. Mix gently.

Pour into a 25cm x 14cm lined loaf tin and bake for about 50 minutes or until a skewer comes out cleanly.
