Stationside Cafe's apricot and white chocolate muesli slice

¾ cup chopped dried apricots
½ cup water
150g butter cut into small
cubes
¾ cup brown sugar
1 cups flour
1 tsp baking powder
1 cup fine rolled oats
1 cup white chocolate melts
to finish: melted white chocolate

Put apricots in a saucepan with the water and bring to the boil. Simmer until all the liquid is absorbed. Remove from heat and add the butter. Stir until it has all melted, then add the sugar, mix well then leave to cool.
Sift flour and baking powder, add to cool apricot mixture with rolled oats and chocolate melts. Mix thoroughly and press into a lined sponge roll tin.
Bake at 180degC for 30-35 minutes. Leave in the tin for 10 minutes.
Remove, cut into bars and drizzle with melted white chocolate.
