Ask a Chef reveals the secrets of those superb dishes you ate in cafes and restaurants and wanted to try yourself.

 

The Coffee Post's orange baby cakes

Ingredients

1½ cups plain flour
1 tsp baking powder
½ tsp baking soda
pinch of salt
zest and juice of two oranges
3 eggs
½ cup vegetable oil
1 cup caster sugar

 

Method

Sift flour, baking powder, baking soda and salt into a small bowl. Add orange zest and set aside.

Beat eggs, sugar, oil and orange juice until light and fluffy and sugar is well combined.

Slowly add dry ingredients while continually beating.

Beat until the batter is smooth.

Pour into a 12-hole greased muffin pan.

Bake at 160degC for 15 minutes until lightly browned and cakes bounce back when touched.

Cool and top with cream cheese frosting or butter icing.
