Croque-o-Dile's lentil roll

Croque-o-Dile's lentil roll

Ingredients
4 cups lentils, boiled until soft
1 large onion, finely chopped
3 gloves garlic, finely chopped
3 Tbsp curry powder
1 Tbsp chilli paste
2 carrots, peeled and grated
2 apples, cored and grated
2 cups chopped parsley
2 eggs
savoury pastry sheets (not puff)

Method
Preheat oven to 200degC.

Drain lentils well.

Cook onion and garlic until soft and glassy. Then add curry powder.

Add chilli paste and mix until a nice paste mixture forms.

Put lentils, onion and chilli paste mix and grated apple and carrot in a bowl and mix to combine. Add parsley and mix again.

Season with salt and pepper, add eggs and mix again.

Form mixture into a log on top of the long side of the pastry and roll up into a log.

Bake for 1 hour.
