The Good Oil’s spring chicken salad

Ingredients
500g cooked chicken, diced
salt to taste
330g aioli
1 cup seedless grapes, halved
1 celery stick, sliced
¼ cup sliced almonds
1 spring onion, sliced
125g bag of baby spinach
1 apple, sliced

Method
Coat chicken in aioli and season to taste.

Add celery, almonds, spring onion and almonds and mix lightly.

Layer chicken mix on to a plate or bowl with spinach.

Top with extra toasted almonds.
