Good Oil's carrot cake

Ask a Chef reveals the secrets of those superb dishes you ate in cafes and restaurants and wanted to try yourself.

Ingredients
1 cup wholemeal flour
1 cup plain flour
2 tsp baking soda
2 cups of raw sugar
½ tsp salt
2 tsp cinnamon
1 cup of cooking oil
4 eggs beaten
1 cup of well drained crushed pineapple
3 cups of grated carrot

Optional
½ cup of finely chopped walnuts

Method
Grease the inside of a 23cm diameter loose-bottom cake tin and line the base with baking paper.

Sift and mix together all the dry ingredients then add the oil and stir well.

Stir in the beaten eggs and grated carrots and crushed pineapple.

Heat the oven to 180degC. Bake in the middle of the oven for one hour or until cooked (test with a skewer).
