Provisions' blueberry bran muffins

Ask a Chef reveals the secrets of those superb dishes you ate in cafes and restaurants and wanted to try yourself.

Makes 12

Ingredients
4 cups bran (baker's bran)
300g flour
1 cup brown sugar
1 Tbsp ground cinnamon
½ tsp salt
2 cups bluberries (we use frozen)
4 Tbsp butter
2 cups milk
1 cup golden syrup
2 tsp baking soda
2 beaten eggs

Method
To make the bran mixture, mix together the bran, brown sugar, flour, cinnamon and salt.

Add blueberries to bran mix.

Melt butter, milk and golden syrup together in pot.

Remove from stove once melted and mixed.

Add baking soda to milk mix and mix well.

Add eggs and milk mix into dry ingredients and mix well.

Bake in greased and lined muffin trays for 30-40 minutes at 180degC until skewer comes out clean.
