Wild Walnut’s date loaf

Wild Walnut's date loaf

Makes 2 loaves

Ingredients
3½ cups dates
3 cups boiling water
1 Tbsp baking soda
120g butter
2 cups brown sugar
1½ cups white flour
1½ cups wholemeal flour
1 cup walnuts, chopped

Method
In a saucepan add chopped dates, boiling water, butter and sugar and simmer for 10 minutes until mushy.

Remove from heat, stir and add in baking soda.

Cool.

Mix in dry ingredients.

Line two loaf tins and divide the mixture between the two.

Bake at 160degC for 45-60 minutes.
