Ask a chef: Cafe Vega's carrot cake

Ask a chef reveals the secrets of Cafe Vega's carrot cake.

1 cup brown sugar
3/4 cup oil
2 eggs
1 tsp ground cloves
1 tsp ground cinnamon
2 big cups grated carrot
1 large cup flour
1 tsp baking powder
1 tsp baking soda
1 cup dried fruit1 cup nuts

Preheat oven to 160degC.

Grease and line a 24cm square tin.

Put all the ingredients in a bowl and mix until combined.

Spoon into the prepared tin and bake for 1 to 1 hours or until a skewer inserted into the centre comes out clean.

Start checking after an hour.

Ice with cream-cheese icing and sprinkle with chopped nuts.
