Ask a chef reveals the secrets of Ritual's savoury muffin.

3 eggs
1/2 cup oil
3 cups milk
6 cups plain flour
8 tsp baking powder
Salt and pepper
1 can corn, drained
1 red onion, finely diced
3 tomatoes finely diced, drained, with seeds removed
1 red capsicum, finely diced
1/2 a bunch of spinach, shredded
2 cups grated cheese cup
1/4 cup fresh chopped herbs (sage, thyme, rosemary)
topping: tomato relish
Swiss cheese

Mix eggs, oil, milk, flour, baking powder and salt and pepper.

Stir in the rest of the ingredients.

Spoon into 12 well-greased Texas muffin tins.

Place 1 teaspoon of good quality tomato relish on top of each muffin and top with a slice of good quality Swiss cheese.

Bake for approx 40 minutes at 190degC until golden and firm to the touch.
