Ask a Chef reveals the secrets of those superb dishes you ate in cafes and restaurants and wanted to try yourself.

 

The Food Department's herb, spinach and cheese muffins
Makes 12 large muffins

Ingredients

2 cups self-raising flour
300g tasty cheese, grated
100g feta, crumbled
1 large handful fresh baby spinach, chopped
2 Tbsp fresh mixed herbs
1½ tsp dill, chopped (fresh is best)
1 free-range egg, beaten
375ml-425ml milk
10ml oil for greasing muffin tin 

 

Method

Mix flour, cheeses, spinach and herbs. Mix the egg with 275ml of the milk and stir into the dry ingredients, adding more milk to make a soft mixture.

Spoon into greased muffin tins and bake at 200degC-210degC for 12-15 minutes.

Place the muffin tin on a cooling rack for five minutes before removing.
