Ask a Chef reveals the secrets of those superb dishes you ate in cafes and restaurants and wanted to try yourself.

 

Port Royale Cafe caramel walnut slice

Base

1 cup self-raising flour
½ cup sugar
1 cup coconut
120g butter, softened

Topping

4 eggs
1 tsp vanilla essence
2 cups coconut
180g or 2 cups of walnut pieces
3 cups brown sugar
1 tsp baking powder

 

Method

Base

Cream butter and sugar until light and fluffy. Add flour and coconut. Mix until it comes together. Press into a slice tin. Bake for 10 minutes at 180degC.

Topping

Beat eggs, vanilla and brown sugar together. Add coconut, walnuts and baking powder and mix. Pour on top of base and bake until golden.
